Hi, I’m Caroline!



I am an Executive Head Pastry Chef from the French Caribbean, with over 10 years of experience in the industry. From american style bakeries to 5 star hotels, as well as french restaurants and bread making bakery; I thrive on widening my knowledge, learning from great, talented pastry chefs and teaching anyone wiling to learn.

As an extra challenge to strenghen my skills and step away from my comfort zone, I took part in the 6th series of Bake Off: the Professionals on Channel 4 and it was probably the most incredible experience of my career!

I am deeply passionate about all styles of baking but I specialise in french patisserie as well as dairy free, gluten free and vegan patisseries as I suffer from many allergies and intolerences myself.

After realizing the gap in dairy free baking content, I decided to start sharing my knowledge and expertise to allow everyone to explore and enjoy different ways of baking and learn how to successfully make amazing cakes and desserts without any dairy (and other allergens).

So this is me, spreading the joy of baking differently and guiding those who don't know where to start.
